Basics of Bread Making, French Pastry, Cake Preparation & Decoration

Bangkok Thai Cooking Academy’s Pastry & Bakery training course provides the fundamental training needed to enhance one’s skills in French pastry, cake making & decorating, chocolates,  and bread making.  No previous experience is needed to enroll in this program.  You only need to have a desire to create delectable desserts.  By training with our professional pastry chefs, you will be amazed how easy it is to take your skills to higher levels.  In just 4 weeks, once you master these classical and contemporary skills and techniques, you will be able to create your own masterpieces.

Join us in Bangkok to learn the basics of bread making, French pastry, cake preparation & decorating, and chocolates.  Training is 100% hands-on.  In just 4 weeks, learn the art of creating exquisite pastries and baked goods, from traditional bread making to pastry showpieces.  An Advanced Pastry course, running from 1 to 4 weeks, is also available.  Inquire for more details.

WEEK 1–BASIC BAKERY/PASTRY MAKING

  • Writing chocolate and cream using paper cone

WEEK 2–ADVANCED CAKE MAKING (Must be taken with Week 1)

  • Yogurt cake
  • Strawberry shortcake
  • White strawberry bavarois
  • Trio chocolate cake
  • Macaron (with fillings)
  • Dark chocolate tower
  • Chocolate truffle cake
  • Tiramisu
  • Opera cake

WEEK 3–CHOCOLATE

  • Chocolate truffles & pralines

WEEK 4–BREAD MAKING

  • Tarte aux pommes
  • Whole wheat bread

ADDITIONAL INFORMATION:

Tuition (based on number of weeks of study)–

  • 1 Week–25,000 Baht
  • 2 Weeks–50,000 Baht
  • 3 Weeks–70,000 Baht
  • 4 Weeks–85,000 Baht

Start Day:  Mondays
Study Week:  Monday-Friday, 10:30 AM – 4 PM daily
When to join:  Study for 1 week up to 4 weeks, start on Week 1, 3 or 4, up to you (weekends also available)

Deposit:  25% required to guarantee your seat
Letter of Acceptance:  Provided to those in need once deposit is received
Certificate of Achievement:  Granted to those completing 1-3 weeks of training
Diploma:  A Basic Pastry & Baking Arts Diploma is awarded upon completion of 4 weeks of training
