OUR ACADEMY

We are proud of our 3 new chef training classrooms.  Each chef student has his own new chef station complete with triple burner fryers, granite food preparation area,  sink, and eating area.  All training is done in air conditioned classrooms.  At the head of the training stations is the instructor’s demonstration station where all recipes are first prepared and demonstrated by the chef instructor.

We are in Bangkok, the capital of Thai culinary cooking and the home of world-renowned Thai dishes.  Who would know Thai cooking better than us, and where else would you go to properly learn Thai cooking?   OUR CULINARY TRAINING PHILOSOPHY

The best way to learn to cook is to do it yourself.  In our intensive, hands-on program, our students –cook, cook, and cook.  Each daily class is divided into 2 sessions–Theory & Demonstrations in the AM, Practical Application (cooking) & Critique in the PM:
     AM Session–Our Head Chef discusses Theory, ingredients preparation, and Demonstrates how to cook each dish, discussing flavors, ingredients, substitutions, cooking methods,….while you ask questions and take notes
     PM Session–YOU get to prepare each dish based on recipes, notes taken, and observations.  Of course, as you have questions, assistance is provided.  By independently preparing each dish, you truly learn how to prepare the dish.  Your “creation” is then critiqued, and the Head Chef tells you how to improve it.
Typically, 5-6 professional Thai dishes are covered in-depth daily.  Upon satisfactory completion of assigned dishes, class ends each day.

Introduction to food preparation, cooking, and food presentation techniques are discussed and practiced.  Familiarity with Thai ingredients (market tour included), preparation of these ingredients for cooking, and familiarity with use of woks, steamers, fryers, cooking utensils is achieved.  Ideal for those not familiar with Thai cooking and homemakers.  For those wishing to start their own restaurants, this course is a perfect start as it covers the most popular Thai dishes.  And for those not having a culinary background, we recommend starting with this basic course before going into our advanced professional chef courses (below).

ADVANCED courses are designed for those who have a basic understanding of Thai cooking ingredients, utensils, and dishes.  For beginners, we recommend starting with our BASIC PROFESSIONAL THAI COOKING courses (see above).  Typically, 5-6 professional dishes are covered daily.

GRAND MASTER THAI CULINARY CHEF COURSE—40 intensive days over 8 weeks or 90 days, takes you from BASIC (2 weeks) through the ADVANCED (6 weeks) for a total of 8 weeks of intensive professional Thai cooking.  During this time, you will have learned over 200 Thai dishes plus fruit carving and banana leaf craft.

Thai cooking skills and knowledge have been fine-tuned, starting with the very basics of Thai ingredients, preparation, cooking, and presentation.  Over 200 dishes plus ability to make at least 12 curry pastes, sticky rice, coconut milk, sauces & dips,…have been mastered.   Familiarity with Thai ingredients, cooking utensils, fryers, etc has been accomplished. Cooking skills, confidence, and use of Thai cooking equipment are mastered in this course.  Also available at no extra charge is 5-10 days of Internship at the school working with our chefs while teaching students Thai culinary skills (optional but great practice).

ONE-ON-ONE INSTRUCTION

Specially designed for those desiring intensive one-on-one training with a Thai chef.  Ask as many questions as you like, cook lots, work hard, learn the basics and learn advanced Thai culinary skills.  Study and cook for as many weeks as you wish, covering up to 30 professional dishes/week.  Instead of being in a group of students, this is your chance to select just what you want to learn and learn for as many weeks as you like–just you and a Thai chef.

PRIVATE CHEF COURSE5 days/week of intensive Thai cooking, basic & advanced cooking and presentation with your own Thai chef, AND you select the dishes to learn:

09:30 – onwards until all dishes are completed for the day, usually Monday-Friday (5 work days)

TRAIN-YOUR-CHEF-AT-OUR-SCHOOL COURSE—4 intensive weeks (20 days), covering up to 60 Thai dishes selected by you:

09:30 onwards–Monday-Friday (20 work days):

Food preparation, cooking techniques, and food presentation techniques are discussed and practiced.  Thai cooking and dishes are illustrated by our instructor and practiced until perfected by the student.  Cooking skills, confidence, and use of Thai cooking equipment are fine-tuned in this course.

Over 4 weeks, learn to cook up to 60 dishes perfectly.  This program offers class training plus lots of independent practice at the school where you can ask for advice and critique.  You select the dishes and we make sure you master them!!  Perfect for restaurant owners and cooks & chefs wanting to master selected Thai dishes.

Course Details (20 Work Days):

  • WEEKS 1 & 3 (Class Time)–
    In-class training covering up to 60 dishes of your choice plus training in Thai ingredients & substitutes, woks, steamers, etc.
    AM Session–
    Our instructor explains and demonstrates each dish
    PM Session–
    You apply what you learned, and our instructor tastes and critiques what you prepared.


  • WEEKS 2 & 4 (Independent Study)–
    Your are on your own at the school.  A table and a fryer are available for your use.  You will spend the week buying ingredients for each dish and actually preparing them until you duplicate each one properly.  Our instructor will be available for questions and critique.

Over a period of 4 weeks, the student should master up to 60 Thai dishes plus be able to identify and select Thai ingredients and substitute ingredients and be able to use Thai cooking utensils.  The student will leave Bangkok with recipes and a working knowledge of Thai aromas, flavors, and proper presentation.

Tuition: 100,000 Baht ($2,800 USD) for 4 weeks of training (includes a 4,000 baht ingredients allowance for Independent Study weeks)
